A rich, creamy, and comforting pasta made in just one pot—perfect for a quick and easy vegan meal!
Ingredients:
- 12 oz pasta (penne, fettuccine, or your favorite)
- 1 tbsp olive oil or vegan butter
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 cups vegetable broth
- 1 can (14 oz) coconut milk or unsweetened plant-based milk
- 1 tbsp nutritional yeast (for cheesy flavor)
- 1 tsp Italian seasoning
- ½ tsp salt (adjust to taste)
- ¼ tsp black pepper
- 1 cup cherry tomatoes, halved (optional)
- 2 cups spinach or kale (optional)
- ¼ cup fresh basil, chopped (for garnish)
Instructions:
- Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add onions and sauté until soft. Stir in garlic and cook for another 30 seconds.
- Add Liquids & Pasta: Pour in vegetable broth and coconut milk, then add pasta. Stir to combine.
- Season & Simmer: Add nutritional yeast, Italian seasoning, salt, and pepper. Bring to a gentle boil, then reduce heat to low. Simmer uncovered for 10-12 minutes, stirring occasionally until pasta is tender.
- Add Veggies: Stir in cherry tomatoes and spinach in the last 2 minutes of cooking. Let them soften.
- Serve & Enjoy: Remove from heat, garnish with fresh basil, and serve warm!
