Instructions:
- In a bowl, mix together peanut butter, honey, and vanilla extract until smooth.
- Stir in oats, chocolate chips, and chia seeds until well combined.
- Chill the mixture in the fridge for 10-15 minutes (this makes rolling easier).
- Roll into bite-sized balls (about 1-inch).
- Store in an airtight container in the fridge for up to 1 week.
