Vegan Ratatouille Recipe

  1. Prep the Vegetables: Slice the zucchini and yellow squash, dice the eggplant and bell peppers, and chop the onion and garlic.
  2. Sauté the Aromatics: In a large pan, heat olive oil over medium heat. Add onions and garlic, and sauté until fragrant.
  3. Cook the Vegetables: Add the eggplant and cook for about 5 minutes until slightly softened. Then, add the bell peppers, zucchini, and yellow squash. Stir occasionally.
  4. Add Tomatoes & Seasonings: Pour in the diced tomatoes and add thyme, oregano, basil, paprika, salt, and black pepper. Stir well.
  5. Simmer: Cover and let it cook on low heat for 20-30 minutes until all the vegetables are tender and flavors meld together.
  6. Garnish & Serve: Taste and adjust seasonings if needed. Garnish with fresh basil and serve warm.
