Ingredients:
- 1 eggplant, diced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 tomatoes, diced (or 1 can of diced tomatoes)
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- ½ tsp dried basil
- ½ tsp smoked paprika (optional)
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions:
- Prep the Vegetables: Slice the zucchini and yellow squash, dice the eggplant and bell peppers, and chop the onion and garlic.
- Sauté the Aromatics: In a large pan, heat olive oil over medium heat. Add onions and garlic, and sauté until fragrant.
- Cook the Vegetables: Add the eggplant and cook for about 5 minutes until slightly softened. Then, add the bell peppers, zucchini, and yellow squash. Stir occasionally.
- Add Tomatoes & Seasonings: Pour in the diced tomatoes and add thyme, oregano, basil, paprika, salt, and black pepper. Stir well.
- Simmer: Cover and let it cook on low heat for 20-30 minutes until all the vegetables are tender and flavors meld together.
- Garnish & Serve: Taste and adjust seasonings if needed. Garnish with fresh basil and serve warm.
