Ingredients
For the Soup:
- 1 lb ground beef (or ground turkey for a leaner option)
- 1 tbsp olive oil (if using lean meat)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 packet (or 2 tbsp) taco seasoning
- 1 tsp smoked paprika (optional, for extra depth)
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (10 oz) can Rotel tomatoes (with green chilies)
- 1 (15 oz) can black beans, drained & rinsed
- 1 (15 oz) can kidney beans, drained & rinsed
- 1 cup frozen corn (or canned, drained)
- 3 cups beef broth (or chicken/vegetable broth)
- 1 cup tomato sauce
- 1 tbsp Worcestershire sauce (optional, for umami)
- For Toppings:
- Shredded cheddar cheese
- Chopped cilantro
- Sour cream or Greek yogurt
- Avocado slices
- Tortilla chips or strips
- Fresh lime wedges
- Instructions
- 1. Brown the Meat
- In a large pot or Dutch oven, heat olive oil over medium heat.
- Add ground beef and cook until browned (5-6 minutes), breaking it apart as it cooks.
- Stir in onion and garlic and sauté for 2 minutes.
- Drain excess fat if necessary.
- 2. Add Seasonings & Liquids
- Stir in taco seasoning and smoked paprika, cooking for 30 seconds to bloom the flavors.
- Add diced tomatoes, Rotel, black beans, kidney beans, corn, beef broth, tomato sauce, and Worcestershire sauce.
- Stir well and bring to a gentle boil.
- 3. Simmer & Serve
- Reduce heat and let simmer for 15-20 minutes, stirring occasionally.
- Taste and adjust seasoning if needed.
