Ingredients:

  • ½ cup chickpea flour (besan)
  • ¼ cup silken tofu (for extra fluffiness)
  • ½ cup plant-based milk (soy or oat for best texture)
  • 1 tbsp nutritional yeast (for a cheesy flavor)
  • ½ tsp turmeric (for color)
  • ½ tsp baking powder (for fluffiness)
  • ¼ tsp black salt (Kala Namak, for an eggy taste)
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp olive oil (for cooking)

Optional Add-ins:

  • Chopped spinach, mushrooms, bell peppers, or vegan cheese

Instructions:

1️⃣ Blend the Batter

  • In a blender, combine chickpea flour, silken tofu, plant milk, nutritional yeast, turmeric, baking powder, black salt, black pepper, garlic powder, and onion powder.
  • Blend until smooth and slightly airy. Let sit for 5 minutes to thicken.

2️⃣ Cook the Omelet

  • Heat olive oil in a non-stick pan over medium heat.
  • Pour in the batter and spread evenly.
  • Cook for 3-4 minutes until the edges lift slightly.

3️⃣ Add Fillings & Fold

  • Sprinkle in veggies, vegan cheese, or herbs.
  • Carefully fold in half and cook for 1-2 more minutes.

4️⃣ Serve & Enjoy!

  • Transfer to a plate and top with avocado, salsa, or vegan sour cream!
