½ cup plant-based milk (soy or oat for best texture)
1 tbsp nutritional yeast (for a cheesy flavor)
½ tsp turmeric (for color)
½ tsp baking powder (for fluffiness)
¼ tsp black salt (Kala Namak, for an eggy taste)
¼ tsp black pepper
½ tsp garlic powder
½ tsp onion powder
1 tsp olive oil (for cooking)
Optional Add-ins:
Chopped spinach, mushrooms, bell peppers, or vegan cheese
Instructions:
1️⃣ Blend the Batter
In a blender, combine chickpea flour, silken tofu, plant milk, nutritional yeast, turmeric, baking powder, black salt, black pepper, garlic powder, and onion powder.
Blend until smooth and slightly airy. Let sit for 5 minutes to thicken.
2️⃣ Cook the Omelet
Heat olive oil in a non-stick pan over medium heat.
Pour in the batter and spread evenly.
Cook for 3-4 minutes until the edges lift slightly.
3️⃣ Add Fillings & Fold
Sprinkle in veggies, vegan cheese, or herbs.
Carefully fold in half and cook for 1-2 more minutes.
4️⃣ Serve & Enjoy!
Transfer to a plate and top with avocado, salsa, or vegan sour cream!
