Instructions

  1. Cook the Noodles:
    • Cook the noodles according to package instructions. Drain, rinse with cold water, and set aside.
  2. Cook the Pork:
    • Heat sesame oil in a large skillet over medium-high heat. Add the ground pork and cook until browned, breaking it into small pieces with a spatula.
    • Add garlic and ginger, and cook for 1-2 minutes until fragrant.
    • Stir in soy sauce, hoisin sauce, chili paste, and red pepper flakes (if using). Cook for another 2-3 minutes to coat the pork in the sauce. Remove from heat and set aside.

    • Heat the mixture in a small saucepan over medium heat until it starts to simmer. Stir in the cornstarch slurry and cook for 1-2 minutes until slightly thickened.

    • Divide the cooked noodles into bowls. Top with the cooked pork, shredded carrots, bell peppers, scallions, and any additional vegetables you like.
    • Drizzle the spicy sauce over each bowl and toss to combine.
