Creamy, cheesy, and packed with hearty potatoes, this slow cooker loaded potato soup is the ultimate comfort food!
Ingredients:

For the Soup:
- 6 russet potatoes, peeled & diced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth (or vegetable broth)
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- ½ tsp paprika (optional)
- 1 cup heavy cream (or half-and-half)
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- 4 slices bacon, cooked & crumbled (for topping)
- 2 tbsp chopped green onions (for garnish)
Instructions:
1️⃣ Prep & Add Ingredients to Slow Cooker
- Add potatoes, onion, garlic, chicken broth, salt, pepper, and paprika to the slow cooker.
2️⃣ Slow Cook Until Tender
- Cook on LOW for 6-8 hours or HIGH for 3-4 hours, until potatoes are fork-tender.
3️⃣ Blend for Creamy Texture
- Use an immersion blender to blend some of the soup for a creamy consistency. (Or transfer half to a blender and blend, then return to the slow cooker.)
4️⃣ Stir in Dairy
- Add heavy cream, cheddar cheese, and sour cream. Stir until smooth.
5️⃣ Garnish & Serve
- Ladle into bowls and top with bacon, green onions, and extra cheese. Enjoy!
