Ingredients:

- 3 tbsp butter (or olive oil for dairy-free)
- 3 tbsp all-purpose flour (or gluten-free flour)
- 2 cups milk (or unsweetened plant-based milk)
- 1 cup heavy cream (or coconut cream)
- 2 tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- ½ tsp paprika (optional)
- 4 large russet or Yukon Gold potatoes, thinly sliced
- 1 ½ cups shredded cheese (cheddar, gruyère, or vegan cheese)
Instructions:
1️⃣ Make the Creamy Sauce
- In a saucepan, melt butter over medium heat.
- Whisk in flour and cook for 1 minute, stirring constantly.
- Slowly pour in milk & cream, whisking until smooth.
- Add garlic powder, onion powder, salt, pepper, and paprika.
- Stir and cook for 2-3 minutes until thickened.
2️⃣ Layer the Potatoes
- Preheat oven to 375°F (190°C).
- Grease a 9×13-inch baking dish.
- Arrange a layer of potato slices, then pour a portion of the cream sauce over them.
- Repeat until all potatoes and sauce are used.
- Sprinkle shredded cheese on top.
3️⃣ Bake Until Golden
- Cover with foil and bake for 35 minutes.
- Remove foil and bake for another 15-20 minutes until golden and bubbly.
