Rich, creamy, and baked to golden perfection—these scalloped potatoes make the ultimate comfort food side dish!

Ingredients:

🥣 Serves 6

  • 3 tbsp butter (or olive oil for dairy-free)
  • 3 tbsp all-purpose flour (or gluten-free flour)
  • 2 cups milk (or unsweetened plant-based milk)
  • 1 cup heavy cream (or coconut cream)
  • 2 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 4 large russet or Yukon Gold potatoes, thinly sliced
  • 1 ½ cups shredded cheese (cheddar, gruyère, or vegan cheese)

Instructions:

1️⃣ Make the Creamy Sauce

  • In a saucepan, melt butter over medium heat.
  • Whisk in flour and cook for 1 minute, stirring constantly.
  • Slowly pour in milk & cream, whisking until smooth.
  • Add garlic powder, onion powder, salt, pepper, and paprika.
  • Stir and cook for 2-3 minutes until thickened.

2️⃣ Layer the Potatoes

  • Preheat oven to 375°F (190°C).
  • Grease a 9×13-inch baking dish.
  • Arrange a layer of potato slices, then pour a portion of the cream sauce over them.
  • Repeat until all potatoes and sauce are used.
  • Sprinkle shredded cheese on top.

3️⃣ Bake Until Golden

  • Cover with foil and bake for 35 minutes.
  • Remove foil and bake for another 15-20 minutes until golden and bubbly.

4️⃣ Rest & Serve

  • Let sit for 5-10 minutes before serving. Enjoy!
