🥣 Rice Flour Tortilla Recipe (Gluten-Free)
Ingredients:
1 cup rice flour
1 cup white or yellow potato, not sweet potato.
½ tsp xanthan gum (optional, for flexibility)
½ tsp salt
1 tbsp olive oil
1 large egg
2 cups hot water (adjust gradually pancake consistency )

Prepare the potato:
Peel and boil one small potato until soft.
Mash until smooth with no chunks (a ricer or fork works well).
Mix the dough:
In a bowl, combine rice flour, salt, xanthan gum.
Add the mashed potato and oil.
Mix, then add hot water ½ cup at a time until it turns into a liquid consistency.
Use a potato masher to help mash up any potato bits you have missed.
Cook:
Cook on a lightly oiled skillet for 30–60 seconds per side, until brown. On medium heat.

Make sure your potato is well mashed.
Make sure your batter is thin and not to thick on the skillet.
