This One-Pot Creamy Tuscan Pasta is rich, flavorful, and packed with garlic, sun-dried tomatoes, and spinach in a luscious parmesan cream sauce. It’s an easy meal that’s perfect for a cozy dinner!
Ingredients
- 8 oz pasta (penne, fettuccine, or rotini)
- 1 tbsp olive oil
- 2 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 2 cups chicken broth (or vegetable broth for vegetarian)
- 1 cup heavy cream (or coconut milk for dairy-free)
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional, for heat)
- ½ tsp black pepper
- ½ tsp salt (adjust to taste)
- 2 cups fresh spinach
- 1 tbsp butter
- Juice of ½ lemon (for brightness)
Optional Add-Ins:
- 1 lb cooked chicken (grilled or shredded)
- ½ lb shrimp, sautéed separately
- Mushrooms or bell peppers, for extra veggies
Instructions
- Sauté the Aromatics
- Heat olive oil in a large skillet or pot over medium heat.
- Add garlic and sun-dried tomatoes, sautéing for 1-2 minutes until fragrant.
- Cook the Pasta
- Pour in chicken broth and heavy cream.
- Stir in pasta, Italian seasoning, red pepper flakes, salt, and black pepper.
- Bring to a boil, then reduce to a simmer. Cover and cook for 10-12 minutes, stirring occasionally, until pasta is al dente.
- Make it Creamy
- Stir in butter, Parmesan cheese, and spinach. Cook for another 1-2 minutes until spinach is wilted and sauce is creamy.
- Squeeze in fresh lemon juice for a burst of flavor.
