One-Pot Broccoli Cheddar Soup

Ingredients:

🥣 Serves 4-6

  • 2 tbsp butter (or olive oil)
  • ½ onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tbsp all-purpose flour (or gluten-free flour)
  • 4 cups vegetable broth (or chicken broth)
  • 2 cups milk (or unsweetened plant-based milk)
  • 3 cups broccoli florets, chopped
  • 1 carrot, shredded
  • ½ tsp paprika (optional, for depth)
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 2 cups cheddar cheese, shredded
  • ½ cup heavy cream (or coconut cream for dairy-free)

Instructions:

1️⃣ Sauté Aromatics

  • In a large pot, melt butter over medium heat.
  • Add onion & garlic, cooking until soft (2-3 minutes).

2️⃣ Make a Roux

  • Stir in flour, cooking for 1 minute until lightly golden.
  • Slowly whisk in broth & milk, stirring until smooth.

3️⃣ Add Vegetables

  • Stir in broccoli, shredded carrot, paprika, salt, and pepper.
  • Simmer for 15 minutes, until broccoli is tender.

4️⃣ Make It Cheesy

  • Reduce heat to low and stir in cheddar cheese until melted.
  • Add heavy cream for extra richness.

5️⃣ Blend & Serve

  • For a chunky texture, leave as is.
  • For a smooth texture, blend half the soup and mix it back in.
  • Garnish with extra cheese, croutons, or green onions.
