One-Bowl Vegan Chocolate Chip Banana Bread

Ingredients:

  • 3 ripe bananas, mashed
  • ½ cup sugar (coconut, brown, or cane)
  • ¼ cup melted coconut oil (or any neutral oil)
  • ¼ cup plant-based milk (almond, oat, or soy)
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour (or whole wheat for a healthier version)
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp cinnamon (optional)
  • ¼ tsp salt
  • ½ cup vegan chocolate chips

Instructions:

1️⃣ Preheat Oven & Prepare Pan

  • Preheat to 350°F (175°C).
  • Grease or line a loaf pan with parchment paper.

2️⃣ Mash & Mix Wet Ingredients

  • In a large bowl, mash bananas.
  • Add sugar, melted coconut oil, plant milk, and vanilla. Stir to combine.

3️⃣ Add Dry Ingredients

  • Sprinkle in flour, baking soda, baking powder, cinnamon, and salt.
  • Gently fold until just combined (don’t overmix!).

4️⃣ Fold in Chocolate Chips

  • Stir in vegan chocolate chips.

5️⃣ Bake

  • Pour batter into the prepared loaf pan.
  • Bake for 50-60 minutes, or until a toothpick inserted comes out clean.

6️⃣ Cool & Enjoy!

  • Let cool for 10 minutes before slicing.
