One-Bowl Vegan Chocolate Chip Banana Bread
Ingredients:
- 3 ripe bananas, mashed
- ½ cup sugar (coconut, brown, or cane)
- ¼ cup melted coconut oil (or any neutral oil)
- ¼ cup plant-based milk (almond, oat, or soy)
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour (or whole wheat for a healthier version)
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp cinnamon (optional)
- ¼ tsp salt
- ½ cup vegan chocolate chips
Instructions:
1️⃣ Preheat Oven & Prepare Pan
- Preheat to 350°F (175°C).
- Grease or line a loaf pan with parchment paper.
2️⃣ Mash & Mix Wet Ingredients
- In a large bowl, mash bananas.
- Add sugar, melted coconut oil, plant milk, and vanilla. Stir to combine.
3️⃣ Add Dry Ingredients
- Sprinkle in flour, baking soda, baking powder, cinnamon, and salt.
- Gently fold until just combined (don’t overmix!).
4️⃣ Fold in Chocolate Chips
- Stir in vegan chocolate chips.
5️⃣ Bake
- Pour batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
6️⃣ Cool & Enjoy!
- Let cool for 10 minutes before slicing.
