Soft, fluffy, and gooey cinnamon rolls made completely dairy-free and egg-free!
Ingredients
For the Dough:
- 3 ½ cups all-purpose flour (or bread flour for extra fluffiness)
- 2 ¼ tsp active dry yeast (1 packet)
- ¼ cup sugar (coconut or cane)
- 1 cup warm plant-based milk (almond, soy, or oat)
- ¼ cup vegan butter, melted (or coconut oil)
- ½ tsp salt
For the Cinnamon Filling:
- ½ cup brown sugar
- 2 tbsp cinnamon
- ¼ cup vegan butter, softened
For the Glaze:
- 1 cup powdered sugar
- 2 tbsp plant-based milk
- ½ tsp vanilla extract
Instructions
1️⃣ Activate the Yeast
- In a bowl, mix warm plant milk, sugar, and yeast.
- Let sit for 5-10 minutes until foamy (this means the yeast is activated).
2️⃣ Make the Dough
- In a large bowl, combine flour and salt.
- Add melted vegan butter and the yeast mixture.
- Mix and knead for 8-10 minutes until smooth and elastic.
3️⃣ First Rise
- Cover the dough with a towel and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
4️⃣ Prepare the Filling
- In a small bowl, mix brown sugar and cinnamon.
5️⃣ Roll & Fill
- On a floured surface, roll the dough into a 12×18-inch rectangle.
- Spread softened vegan butter evenly.
- Sprinkle the cinnamon-sugar mixture on top.
6️⃣ Shape the Rolls
- Roll the dough tightly from the longer side.
- Slice into 10-12 rolls.
7️⃣ Second Rise
- Place rolls in a greased baking dish, cover, and let rise again for 30-45 minutes.
8️⃣ Bake
- Preheat oven to 350°F (175°C).
- Bake for 20-25 minutes, until golden brown.
9️⃣ Make the Glaze
- Mix powdered sugar, plant milk, and vanilla until smooth.
