Ingredients:
For the Dough:
- 3 ½ cups all-purpose flour (or bread flour)
- 2 ¼ tsp active dry yeast (1 packet)
- ¼ cup sugar (coconut or cane)
- 1 cup warm plant-based milk (almond, soy, or oat)
- ¼ cup vegan butter, melted (or coconut oil)
- ½ tsp salt
For the Cinnamon Filling:
- ½ cup brown sugar
- 2 tbsp cinnamon
- ¼ cup vegan butter, softened
For the Glaze:
- 1 cup powdered sugar
- 2 tbsp plant-based milk
- ½ tsp vanilla extract
Instructions:
- Activate the Yeast: In a bowl, mix warm plant milk, sugar, and yeast. Let sit for 5-10 minutes until foamy.
- Make the Dough: In a large bowl, combine flour and salt. Add melted vegan butter and the yeast mixture. Mix and knead for 8-10 minutes until smooth and elastic.
- Let It Rise: Cover and let dough rise in a warm place for 1-1.5 hours, or until doubled in size.
- Prepare the Filling: Mix brown sugar and cinnamon in a bowl.
- Roll It Out: On a floured surface, roll the dough into a 12×18-inch rectangle. Spread softened vegan butter evenly, then sprinkle the cinnamon-sugar mixture.
- Shape the Rolls: Roll the dough tightly from the longer side, then slice into 10-12 rolls.
- Second Rise: Place rolls in a greased baking dish, cover, and let rise again for 30-45 minutes.
- Bake: Preheat oven to 350°F (175°C) and bake for 20-25 minutes, until golden brown.
- Make the Glaze: Mix powdered sugar, plant milk, and vanilla until smooth. Drizzle over warm rolls.
