Healthy Blueberry Banana Bread
Ingredients:
- 2 large ripe bananas, mashed
- ¼ cup maple syrup or agave (or 2 tbsp if you prefer less sweet)
- ¼ cup coconut oil, melted (or applesauce for an oil-free version)
- ⅓ cup plant-based milk (almond, oat, or soy)
- 1 tsp vanilla extract
- 1 ½ cups whole wheat flour (or oat flour for gluten-free)
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp cinnamon
- ¼ tsp salt
- ¾ cup fresh or frozen blueberries (tossed in a little flour to prevent sinking)
Instructions:
1️⃣ Preheat Oven & Prepare Pan
- Preheat to 350°F (175°C).
- Grease or line a loaf pan with parchment paper.
2️⃣ Mix Wet Ingredients
- In a large bowl, mash bananas.
- Stir in maple syrup, melted coconut oil (or applesauce), plant milk, and vanilla extract.
3️⃣ Add Dry Ingredients
- Sprinkle in flour, baking soda, baking powder, cinnamon, and salt.
- Gently mix until just combined (do not overmix!).
4️⃣ Fold in Blueberries
- Toss blueberries in a little flour (to prevent sinking), then gently fold them into the batter.
5️⃣ Bake
- Pour the batter into the prepared loaf pan.
- Bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
6️⃣ Cool & Enjoy!
- Let cool for 10 minutes, then slice and serve!
