- 1 cup GF pancake mix
- 1 egg
- ¾ cup milk (or dairy-free alternative)
- 2 tbsp melted butter or oil
- 1 tsp vanilla extract (optional)
Instructions:
- Whisk together wet ingredients.
- Stir in the dry mix until just combined (don’t overmix!).
- Cook on a greased skillet over medium heat for 2-3 minutes per side.
For Waffles (Makes ~4 Waffles):
- 1 cup GF waffle mix
- 1 egg
- 1 cup milk (or dairy-free alternative)
- 3 tbsp melted butter or oil
- ½ tsp vanilla extract (optional)
Instructions:
- Whisk wet ingredients together, then mix in the dry mix.
- Cook in a preheated waffle iron until golden and crispy.
