Creamy Dairy-Free One-Pot Pasta

A rich, creamy, and comforting pasta made in just one pot—perfect for a quick and easy vegan meal!

Ingredients:

  • 12 oz pasta (penne, fettuccine, or your favorite)
  • 1 tbsp olive oil or vegan butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 can (14 oz) coconut milk or unsweetened plant-based milk
  • 1 tbsp nutritional yeast (for cheesy flavor)
  • 1 tsp Italian seasoning
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • 1 cup cherry tomatoes, halved (optional)
  • 2 cups spinach or kale (optional)
  • ¼ cup fresh basil, chopped (for garnish)

Instructions:

  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add onions and sauté until soft. Stir in garlic and cook for another 30 seconds.
  2. Add Liquids & Pasta: Pour in vegetable broth and coconut milk, then add pasta. Stir to combine.
  3. Season & Simmer: Add nutritional yeast, Italian seasoning, salt, and pepper. Bring to a gentle boil, then reduce heat to low. Simmer uncovered for 10-12 minutes, stirring occasionally until pasta is tender.
  4. Add Veggies: Stir in cherry tomatoes and spinach in the last 2 minutes of cooking. Let them soften.
  5. Serve & Enjoy: Remove from heat, garnish with fresh basil, and serve warm!
