Ingredients:

  • 1 tbsp curry powder

  • 1 tbsp soy sauce (or coconut aminos for keto)
  • 1 cup chicken broth
  • 1/2 cup coconut milk (or heavy cream)
  • 1 tsp xanthan gum (or cornstarch for a non-keto version)
  • 1/2 cup bell peppers, sliced (optional)
  • 1/2 cup green peas (omit for strict keto)

Instructions:

  1. Sear the Chicken:
    • Heat 1 tbsp olive oil in a pan over medium-high heat.
    • Add the chicken pieces, season with salt and pepper, and cook until golden brown (about 5 minutes). Remove and set aside.
