Instructions

  1. Sauté the Vegetables:
    Heat olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until softened (about 3 minutes). Add the diced bell peppers and cook for another 5 minutes.

  2. Cook the Beef:
    Push the vegetables to one side of the pot. Add the ground beef, breaking it apart with a wooden spoon, and cook until browned (about 7–8 minutes). Drain any excess grease if necessary.

  3. Add Tomato Paste & Spices:
    Stir in the tomato paste, chili powder, cumin, smoked paprika, cayenne (if using), oregano, salt, and black pepper. Cook for 1–2 minutes to bloom the spices.

  4. Simmer the Chili:
    Pour in the diced tomatoes (with their juices), kidney beans, black beans, and beef stock. Stir well to combine. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 30–40 minutes, stirring occasionally.

  5. Adjust Seasoning:
    Taste and adjust the seasoning with more salt, pepper, or spices as desired.

  6. Serve:
    Ladle the chili into bowls and add your favorite toppings.
