Ingredients
For the Chicken Filling:
- 2 cups cooked chicken, shredded (rotisserie works great!)
- 1 tbsp butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup frozen peas
- 1 cup frozen corn
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp dried thyme
- ½ tsp smoked paprika
- 1 can (10.5 oz) cream of chicken soup (or use homemade)
- ½ cup chicken broth
- ½ cup milk
For the Biscuits:
- 1 can refrigerated biscuits (or homemade)
- 1 tbsp melted butter (for brushing)
- ½ tsp garlic powder (optional, for extra flavor)
Instructions
1. Preheat & Prep
- Preheat oven to 375°F (190°C).
- Grease a 9×13-inch baking dish.
2. Make the Chicken Filling
- In a skillet, melt butter over medium heat.
- Sauté onion, garlic, and carrots for 3-4 minutes until softened.
- Stir in chicken, peas, corn, salt, pepper, thyme, and smoked paprika.
- Add cream of chicken soup, chicken broth, and milk, stirring until well combined.
- Simmer for 2-3 minutes, then pour into the prepared baking dish.
3. Add the Biscuits
- Place biscuits on top of the chicken mixture.
- Brush with melted butter and sprinkle with garlic powder (optional).
4. Bake & Serve
- Bake for 25-30 minutes, until biscuits are golden brown and cooked through.
- Let cool slightly, then serve warm!
