Ingredients

For the Chicken Filling:

  • 2 cups cooked chicken, shredded (rotisserie works great!)
  • 1 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • ½ tsp smoked paprika
  • 1 can (10.5 oz) cream of chicken soup (or use homemade)
  • ½ cup chicken broth
  • ½ cup milk

For the Biscuits:

  • 1 can refrigerated biscuits (or homemade)
  • 1 tbsp melted butter (for brushing)
  • ½ tsp garlic powder (optional, for extra flavor)

Instructions

1. Preheat & Prep

  • Preheat oven to 375°F (190°C).
  • Grease a 9×13-inch baking dish.

2. Make the Chicken Filling

  • In a skillet, melt butter over medium heat.
  • Sauté onion, garlic, and carrots for 3-4 minutes until softened.
  • Stir in chicken, peas, corn, salt, pepper, thyme, and smoked paprika.
  • Add cream of chicken soup, chicken broth, and milk, stirring until well combined.
  • Simmer for 2-3 minutes, then pour into the prepared baking dish.

3. Add the Biscuits

  • Place biscuits on top of the chicken mixture.
  • Brush with melted butter and sprinkle with garlic powder (optional).

4. Bake & Serve

  • Bake for 25-30 minutes, until biscuits are golden brown and cooked through.
  • Let cool slightly, then serve warm!
