This Asparagus-Stuffed Chicken Breast is juicy, flavorful, and packed with melty cheese and tender asparagus. It’s a great low-carb, keto-friendly meal that’s easy to make but looks gourmet!
Ingredients
- 2 large boneless, skinless chicken breasts
- 6-8 asparagus spears, trimmed
- ½ cup shredded mozzarella cheese (or provolone, feta, or cream cheese)
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp smoked paprika
- ½ tsp Italian seasoning
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
- 1 tbsp butter
- Toothpicks (to secure the chicken)
Instructions
- Prepare the Chicken
- Preheat oven to 375°F (190°C).
- Slice each chicken breast horizontally, creating a pocket without cutting all the way through.
- Season inside and outside of the chicken with garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper.
- Stuff the Chicken
- Place 3-4 asparagus spears inside each chicken breast.
- Add ¼ cup shredded cheese on top of the asparagus.
- Secure with toothpicks to keep everything in place.
- Sear the Chicken
- Heat olive oil and butter in an oven-safe skillet over medium-high heat.
- Sear the chicken for 3-4 minutes per side, until golden brown.
- Bake the Chicken
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, until the chicken reaches an internal temperature of 165°F (75°C).
- Serve & Enjoy
- Remove toothpicks before serving.
- Pair with a side of roasted veggies, cauliflower mash, or a fresh salad.
