Ingredients: (Serves 4)

  • 1 medium head cauliflower, cut into florets (~4 cups)
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup heavy cream
  • 2 tbsp cream cheese
  • 1 tsp Dijon mustard (optional, for extra flavor)
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika (optional)
  • Salt & pepper to taste

Instructions:

  1. Preheat Oven:
    • Set to 375°F (190°C) and grease a baking dish.
  2. Cook the Cauliflower:
    • Boil cauliflower florets in salted water for 5 minutes until just tender.
    • Drain well and pat dry to prevent watery sauce.
  3. Make the Cheese Sauce:
    • In a saucepan over medium heat, warm heavy cream and stir in cream cheese until melted.
