Ingredients:

  • 1 lb (450g) shrimp, peeled and deveined
  • 1 smoked sausage (keto-friendly, like Andouille or chorizo), sliced
  • 1 1/2 cups cauliflower florets (as a low-carb substitute for potatoes)
  • 1 cup baby bell peppers, sliced
  • 1 small zucchini, sliced (optional)
  • 3 tbsp butter (or olive oil)
  • 1 tbsp Old Bay seasoning (or Cajun seasoning)
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1 lemon, cut into wedges
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Preheat Oven:
    • Set oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare Ingredients:
    • In a large bowl, mix shrimp, sausage, cauliflower, bell peppers, and zucchini.
    • Melt butter and mix with Old Bay seasoning, garlic powder, paprika, salt, and pepper.
  3. Coat & Arrange:
