Ingredients:

- 2 tbsp butter (or olive oil)
- ½ onion, finely chopped
- 2 cloves garlic, minced
- 3 tbsp all-purpose flour (or gluten-free flour)
- 4 cups vegetable broth (or chicken broth)
- 2 cups milk (or unsweetened plant-based milk)
- 3 cups broccoli florets, chopped
- 1 carrot, shredded
- ½ tsp paprika (optional, for depth)
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- 2 cups cheddar cheese, shredded
- ½ cup heavy cream (or coconut cream for dairy-free)
Instructions:
1️⃣ Sauté Aromatics
- In a large pot, melt butter over medium heat.
- Add onion & garlic, cooking until soft (2-3 minutes).
2️⃣ Make a Roux
- Stir in flour, cooking for 1 minute until lightly golden.
- Slowly whisk in broth & milk, stirring until smooth.
3️⃣ Add Vegetables
- Stir in broccoli, shredded carrot, paprika, salt, and pepper.

4️⃣ Make It Cheesy
