Ingredients:

- 4 medium potatoes, diced (Yukon Gold or Russet)
- 2 tbsp olive oil (or butter)
- ½ onion, finely chopped
- 1 bell pepper, diced (red, green, or both)
- 2 garlic cloves, minced
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- ¼ tsp red pepper flakes (optional, for heat)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions:
1️⃣ Sauté the Potatoes
- Heat olive oil in a large pan over medium heat.
- Add diced potatoes and cook for 10-12 minutes, stirring occasionally, until they start turning golden.
2️⃣ Add Flavor
- Stir in onions, bell peppers, and garlic.
- Cook for another 5-7 minutes, until softened.
3️⃣ Season & Crisp Up
- Sprinkle paprika, garlic powder, onion powder, salt, and black pepper over the potatoes.
- Increase heat slightly and cook for 3-5 more minutes until crispy.
4️⃣ Garnish & Serve
- Remove from heat, sprinkle with fresh parsley, and serve warm!
