Ingredients:

🥔 Serves 4

  • 4 medium potatoes, diced (Yukon Gold or Russet)
  • 2 tbsp olive oil (or butter)
  • ½ onion, finely chopped
  • 1 bell pepper, diced (red, green, or both)
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional, for heat)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions:

1️⃣ Sauté the Potatoes

  • Heat olive oil in a large pan over medium heat.
  • Add diced potatoes and cook for 10-12 minutes, stirring occasionally, until they start turning golden.

2️⃣ Add Flavor

  • Stir in onions, bell peppers, and garlic.
  • Cook for another 5-7 minutes, until softened.

3️⃣ Season & Crisp Up

  • Sprinkle paprika, garlic powder, onion powder, salt, and black pepper over the potatoes.
  • Increase heat slightly and cook for 3-5 more minutes until crispy.

4️⃣ Garnish & Serve

  • Remove from heat, sprinkle with fresh parsley, and serve warm!
