Cinnamon Roll French Toast Roll-Up

Ingredients:

For the Roll-Ups:

  • 6 slices of soft bread (white, whole wheat, or gluten-free)
  • 2 tbsp vegan butter (softened)
  • ¼ cup coconut sugar or brown sugar
  • 1 tsp cinnamon

For the French Toast Batter:

  • ½ cup plant-based milk (almond, oat, or soy)
  • 2 tbsp chickpea flour (or cornstarch for binding)
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract
  • ½ tsp cinnamon

For Cooking:

  • 1 tbsp vegan butter or coconut oil

For Topping:

  • Powdered sugar (optional)
  • Drizzle of maple syrup or vegan cream cheese glaze

Instructions:

1️⃣ Flatten & Fill the Bread

  • Cut off the crusts from the bread slices.
  • Use a rolling pin to flatten each slice.
  • Spread a thin layer of vegan butter over each slice.
  • In a small bowl, mix coconut sugar and cinnamon, then sprinkle evenly over the buttered bread.

2️⃣ Roll Them Up

  • Roll each slice tightly into a log and press gently to seal.

3️⃣ Make the Batter

  • In a bowl, whisk together plant milk, chickpea flour, maple syrup, vanilla, and cinnamon until smooth.

4️⃣ Dip & Cook

  • Heat vegan butter or coconut oil in a pan over medium heat.
  • Dip each roll-up in the batter, coating all sides lightly.
  • Cook for 2-3 minutes per side, turning until golden brown and crispy.

5️⃣ Serve & Enjoy!

  • Dust with powdered sugar, drizzle with maple syrup, or top with a vegan cream cheese glaze for extra indulgence!
