Ingredients:

For the “Eggy” Mixture:

  • ½ cup firm tofu (or chickpea flour for a soy-free option)
  • ¼ cup plant-based milk (almond, soy, or oat)
  • 1 tbsp nutritional yeast (for cheesy flavor)
  • ¼ tsp turmeric (for color)
  • ¼ tsp black salt (Kala Namak, for eggy taste)
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder

For the Toast:

  • 2 slices of bread (whole wheat, sourdough, or gluten-free)
  • ¼ cup vegan cheese (shredded, optional)
  • 1 tbsp vegan butter or oil (for cooking)

Instructions:

1️⃣ Blend the “Egg” Mixture

  • In a blender or bowl, mash the tofu and mix with plant milk, nutritional yeast, turmeric, black salt, pepper, garlic powder, and onion powder until smooth.

2️⃣ Dip & Coat

  • Spread the “eggy” mixture evenly on top of the bread slices.
  • Sprinkle with vegan cheese for extra cheesiness.

3️⃣ Cook the Toast

  • Heat a pan over medium heat and melt vegan butter.
  • Place the coated side of the bread down and cook for 2-3 minutes until golden and slightly crispy.
  • Flip and toast the other side lightly.

4️⃣ Serve & Enjoy!

  • Garnish with chopped chives, red pepper flakes, or avocado and serve warm!
