Peanut Butter Energy Bites (No-Bake & Vegan!)

Ingredients:

  • 1 cup rolled oats
  • ½ cup natural peanut butter (or almond butter)
  • ¼ cup maple syrup or agave
  • 1 tsp vanilla extract
  • 2 tbsp chia seeds or flaxseeds (for extra nutrition)
  • ¼ cup vegan chocolate chips (optional)
  • ¼ tsp salt

Instructions:

1️⃣ Mix Everything Together

  • In a bowl, combine oats, peanut butter, maple syrup, vanilla, chia seeds, and salt.
  • Stir until well combined. Add chocolate chips if using.

2️⃣ Roll Into Balls

  • Scoop out about 1 tbsp of mixture and roll into bite-sized balls.

3️⃣ Chill & Enjoy!

  • Place in the fridge for 15-20 minutes to firm up.
  • Store in an airtight container in the fridge for up to 1 week.
