Healthy Banana Pancakes

Ingredients:

  • 1 large ripe banana, mashed
  • 1 cup oat flour (or blended rolled oats)
  • ¾ cup plant-based milk (almond, oat, or soy)
  • 1 tbsp maple syrup or agave (optional)
  • 1 tsp baking powder
  • ½ tsp cinnamon (optional)
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • Coconut oil (for cooking)

Instructions:

1️⃣ Mix the Batter

  • In a bowl, mash banana until smooth.
  • Add plant milk, vanilla, and maple syrup. Mix well.
  • Stir in oat flour, baking powder, cinnamon, and salt. Let sit for 5 minutes to thicken.

2️⃣ Cook the Pancakes

  • Heat a non-stick pan over medium heat and lightly grease with coconut oil.
  • Pour ¼ cup batter for each pancake. Cook for 2-3 minutes until bubbles form, then flip and cook another 1-2 minutes.

3️⃣ Serve & Enjoy!

  • Stack them up and top with fresh fruit, nut butter, or maple syrup!
