Ingredients:
- 1 large ripe banana, mashed
- 1 cup oat flour (or blended rolled oats)
- ¾ cup plant-based milk (almond, oat, or soy)
- 1 tbsp maple syrup or agave (optional)
- 1 tsp baking powder
- ½ tsp cinnamon (optional)
- 1 tsp vanilla extract
- ¼ tsp salt
- Coconut oil (for cooking)
Instructions:
1️⃣ Mix the Batter
- In a bowl, mash banana until smooth.
- Add plant milk, vanilla, and maple syrup. Mix well.
- Stir in oat flour, baking powder, cinnamon, and salt. Let sit for 5 minutes to thicken.
2️⃣ Cook the Pancakes
- Heat a non-stick pan over medium heat and lightly grease with coconut oil.
- Pour ¼ cup batter for each pancake. Cook for 2-3 minutes until bubbles form, then flip and cook another 1-2 minutes.
