These super easy, healthy, and naturally sweet cookies are perfect for a quick breakfast or snack!

Ingredients:

  • 2 ripe bananas, mashed
  • 1 ½ cups rolled oats
  • ⅓ cup peanut butter (or almond/sunflower butter for nut-free)

Optional Add-ins (for extra flavor):

  • ¼ cup vegan chocolate chips or raisins
  • 1 tsp cinnamon
  • 2 tbsp shredded coconut
  • 2 tbsp chia seeds or flaxseeds

Instructions:

  1. Preheat Oven: Set to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Ingredients: In a bowl, mash the bananas, then stir in oats and peanut butter until well combined. Add optional ingredients if using.
  3. Form Cookies: Scoop spoonfuls of the mixture onto the baking sheet and flatten slightly.
  4. Bake: Bake for 12-15 minutes until firm and golden.
  5. Cool & Enjoy: Let cool on the tray before eating.
