These super easy, healthy, and naturally sweet cookies are perfect for a quick breakfast or snack!
Ingredients:
- 2 ripe bananas, mashed
- 1 ½ cups rolled oats
- ⅓ cup peanut butter (or almond/sunflower butter for nut-free)
Optional Add-ins (for extra flavor):
- ¼ cup vegan chocolate chips or raisins
- 1 tsp cinnamon
- 2 tbsp shredded coconut
- 2 tbsp chia seeds or flaxseeds
Instructions:
- Preheat Oven: Set to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Ingredients: In a bowl, mash the bananas, then stir in oats and peanut butter until well combined. Add optional ingredients if using.
- Form Cookies: Scoop spoonfuls of the mixture onto the baking sheet and flatten slightly.
- Bake: Bake for 12-15 minutes until firm and golden.
- Cool & Enjoy: Let cool on the tray before eating.
