Ingredients:
- 8 oz noodles (rice noodles, soba, or spaghetti)
- 1 tbsp sesame oil (or olive oil)
- 4 cloves garlic, minced
- 1-inch ginger, grated (optional)
- 1 small carrot, julienned
- 1 bell pepper, thinly sliced
- ½ cup broccoli florets
- ½ cup snap peas or green beans
- ½ cup mushrooms, sliced
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp maple syrup or agave (optional for sweetness)
- 1 tsp rice vinegar or lime juice
- ½ tsp red pepper flakes (optional for spice)
- 1 tsp sesame seeds for garnish
- 2 tbsp chopped green onions for garnish
Instructions:
- Cook the Noodles: Boil noodles according to package instructions. Drain and set aside.
- Sauté Garlic & Ginger: In a large pan or wok, heat sesame oil over medium heat. Add garlic and ginger, stirring until fragrant.
- Stir-Fry the Veggies: Add carrots, bell peppers, broccoli, snap peas, and mushrooms. Cook for 3-5 minutes until slightly tender but still crisp.
- Make the Sauce: In a small bowl, mix soy sauce, maple syrup, rice vinegar, and red pepper flakes. Pour over the veggies.
- Combine Everything: Add the cooked noodles to the pan and toss well to coat with the sauce. Cook for another 1-2 minutes.
