Veggie Garlic Noodles

A quick and flavorful dish packed with stir-fried veggies and a garlicky umami sauce. Perfect for a healthy and satisfying meal!

Ingredients:

  • 8 oz noodles (rice noodles, soba, or spaghetti)
  • 1 tbsp sesame oil (or olive oil)
  • 4 cloves garlic, minced
  • 1-inch ginger, grated (optional)
  • 1 small carrot, julienned
  • 1 bell pepper, thinly sliced
  • ½ cup broccoli florets
  • ½ cup snap peas or green beans
  • ½ cup mushrooms, sliced
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp maple syrup or agave (optional for sweetness)
  • 1 tsp rice vinegar or lime juice
  • ½ tsp red pepper flakes (optional for spice)
  • 1 tsp sesame seeds for garnish
  • 2 tbsp chopped green onions for garnish

Instructions:

  1. Cook the Noodles: Boil noodles according to package instructions. Drain and set aside.
  2. Sauté Garlic & Ginger: In a large pan or wok, heat sesame oil over medium heat. Add garlic and ginger, stirring until fragrant.
  3. Stir-Fry the Veggies: Add carrots, bell peppers, broccoli, snap peas, and mushrooms. Cook for 3-5 minutes until slightly tender but still crisp.
  4. Make the Sauce: In a small bowl, mix soy sauce, maple syrup, rice vinegar, and red pepper flakes. Pour over the veggies.
  5. Combine Everything: Add the cooked noodles to the pan and toss well to coat with the sauce. Cook for another 1-2 minutes.
  6. Garnish & Serve: Sprinkle sesame seeds and green onions on top. Serve warm and enjoy!

Optional Add-ins:

  • Add tofu, tempeh, or edamame for protein.
  • Mix in spinach or bok choy for extra greens.
  • Top with crushed peanuts or cashews for crunch.
