This BBQ Meatloaf & Veggie Dinner is a hearty, flavorful meal that’s easy to prepare. Juicy, smoky meatloaf glazed with tangy BBQ sauce, served alongside roasted vegetables, makes for the perfect comfort food dinner or meal prep option.
Ingredients
For the Meatloaf:
- 1 ½ lbs ground beef (or ground turkey/chicken for a leaner option)
- ½ cup breadcrumbs (or almond flour for keto)
- 1 egg
- ½ cup onion, finely diced
- 2 cloves garlic, minced
- ½ cup BBQ sauce (divided)
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
For the Roasted Veggies:
- 2 cups baby carrots
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 1 cup broccoli florets
- 1 tbsp olive oil
- ½ tsp salt & black pepper
- ½ tsp garlic powder
- ½ tsp smoked paprika
Instructions
1. Preheat & Prep
- Preheat oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
2. Make the Meatloaf
- In a large bowl, mix ground beef, breadcrumbs, egg, onion, garlic, ¼ cup BBQ sauce, Worcestershire sauce, smoked paprika, salt, and black pepper.
- Shape into a loaf and place it on one side of the sheet pan.
3. Roast the Veggies
- Toss carrots, zucchini, bell pepper, and broccoli with olive oil, salt, pepper, garlic powder, and smoked paprika.
- Spread them on the other side of the sheet pan.
4. Bake & Glaze
- Bake for 25 minutes.
- Brush the meatloaf with the remaining ¼ cup BBQ sauce.
- Bake for another 10-15 minutes, or until the internal temperature of the meatloaf reaches 160°F (70°C).
5. Rest & Serve
- Let the meatloaf rest for 5 minutes before slicing.
- Serve with the roasted veggies and extra BBQ sauce on the side.
