These Loaded Sheet Pan Nachos are the ultimate crowd-pleaser! Crispy tortilla chips layered with melty cheese, seasoned meat (or a vegan option), and tons of fresh toppings make for the perfect appetizer, game-day snack, or even a fun dinner!
Ingredients
For the Nachos:
- 1 large bag tortilla chips (about 10-12 oz)
- 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 1 (15 oz) can black beans, drained and rinsed
- ½ cup sliced black olives
- ½ cup pickled jalapeños (optional)
- ½ cup diced tomatoes
- ½ cup diced red onion
- ½ cup corn (fresh or canned, drained)
For the Protein (Choose One):
- 1 lb ground beef, chicken, or turkey
- 1 (15 oz) can lentils or plant-based crumbles (for a vegan option)
- 1 tbsp olive oil
- 1 tbsp taco seasoning
- ½ cup water
For Toppings:
- ½ cup sour cream or Greek yogurt
- ½ cup guacamole or diced avocado
- ¼ cup chopped cilantro
- ¼ cup sliced green onions
- ½ cup salsa or pico de gallo
- Lime wedges for serving
Instructions
1. Preheat & Prepare
- Preheat oven to 400°F (200°C).
- Line a large sheet pan with parchment paper or lightly grease it.
2. Cook the Protein
- Heat olive oil in a pan over medium heat.
- Add ground beef (or plant-based protein) and cook for 5-7 minutes, breaking it up.
- Stir in taco seasoning and ½ cup water, simmer for 2-3 minutes, then remove from heat.
3. Assemble the Nachos
- Spread tortilla chips evenly on the sheet pan.
- Sprinkle half of the cheese over the chips.
- Add seasoned meat, black beans, olives, jalapeños, corn, and red onion.
- Top with the remaining cheese.
4. Bake to Perfection
- Bake for 8-10 minutes, or until the cheese is melted and bubbly.
5. Add Fresh Toppings & Serve
- Remove from the oven and top with diced tomatoes, green onions, cilantro, guacamole, and sour cream.
- Serve with lime wedges and salsa on the side.
