This Sheet Pan Steak & Rainbow Veggies is a quick, flavorful, and healthy meal! Juicy, well-seasoned steak and colorful roasted vegetables make for an easy dinner or meal prep option—all in one pan!
Ingredients
For the Steak:
- 1.5 lbs sirloin steak (or ribeye, flank, or strip)
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar (optional, for tenderness)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp dried thyme
- ½ tsp red pepper flakes (optional, for heat)
For the Rainbow Veggies:
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 1 red onion, sliced
- 2 tbsp olive oil
- ½ tsp salt & black pepper
- ½ tsp garlic powder
- ½ tsp Italian seasoning
For Garnish:
- Fresh parsley or cilantro, chopped
- Lemon wedges for squeezing
- Grated Parmesan (optional)
Instructions
1. Preheat & Prep
- Preheat oven to 400°F (200°C).
- Line a large sheet pan with parchment paper or lightly grease it.
2. Season the Steak
- In a bowl, mix olive oil, balsamic vinegar, garlic powder, onion powder, smoked paprika, salt, pepper, thyme, and red pepper flakes.
- Rub the mixture all over the steak and let it sit while you prepare the veggies.
3. Prep the Veggies
- Toss bell peppers, zucchini, cherry tomatoes, broccoli, and red onion with olive oil, salt, black pepper, garlic powder, and Italian seasoning.
- Spread them evenly on the sheet pan.
4. Cook the Steak & Veggies
- Place steak on the sheet pan, making space among the veggies.
- Roast for 15 minutes, then flip the steak.
- Continue roasting for 5-10 minutes more, depending on preferred doneness:
- Medium-Rare: 125-130°F (52-54°C)
- Medium: 135-140°F (57-60°C)
- Well-Done: 150°F+ (65°C+)
5. Rest & Serve
- Remove the steak from the pan and let it rest for 5 minutes before slicing.
- Sprinkle with fresh parsley and serve with lemon wedges.
