Ingredients

  • 8 oz pasta (penne, fettuccine, or rotini)
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups chicken broth (or vegetable broth for vegetarian)
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional, for heat)
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)
  • 2 cups fresh spinach
  • 1 tbsp butter
  • Juice of ½ lemon (for brightness)

Optional Add-Ins:

  • 1 lb cooked chicken (grilled or shredded)
  • ½ lb shrimp, sautéed separately
  • Mushrooms or bell peppers, for extra veggies

Instructions

  1. Sauté the Aromatics
    • Heat olive oil in a large skillet or pot over medium heat.
    • Add garlic and sun-dried tomatoes, sautéing for 1-2 minutes until fragrant.
  2. Cook the Pasta
    • Pour in chicken broth and heavy cream.
    • Stir in pasta, Italian seasoning, red pepper flakes, salt, and black pepper.
