This Asparagus-Stuffed Chicken Breast is juicy, flavorful, and packed with melty cheese and tender asparagus. It’s a great low-carb, keto-friendly meal that’s easy to make but looks gourmet!

Ingredients

  • 2 large boneless, skinless chicken breasts
  • 6-8 asparagus spears, trimmed
  • ½ cup shredded mozzarella cheese (or provolone, feta, or cream cheese)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Toothpicks (to secure the chicken)

Instructions

  1. Prepare the Chicken
    • Preheat oven to 375°F (190°C).
    • Slice each chicken breast horizontally, creating a pocket without cutting all the way through.
    • Season inside and outside of the chicken with garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper.
  2. Stuff the Chicken
    • Place 3-4 asparagus spears inside each chicken breast.
    • Add ¼ cup shredded cheese on top of the asparagus.
    • Secure with toothpicks to keep everything in place.
  3. Sear the Chicken
    • Heat olive oil and butter in an oven-safe skillet over medium-high heat.
    • Sear the chicken for 3-4 minutes per side, until golden brown.
  4. Bake the Chicken
    • Transfer the skillet to the preheated oven and bake for 15-20 minutes, until the chicken reaches an internal temperature of 165°F (75°C).
  5. Serve & Enjoy
    • Remove toothpicks before serving.
    • Pair with a side of roasted veggies, cauliflower mash, or a fresh salad.
