Ingredients

For the Pork:

  • 1 lb (450 g) ground pork
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp sesame oil or vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tsp chili paste (such as sambal oelek) or to taste
  • 1/2 tsp crushed red pepper flakes (optional for extra heat)

For the Sauce:

  • 1/4 cup (60 ml) soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp chili oil or chili crisp
  • 1 tbsp brown sugar or honey
  • 1 tsp cornstarch mixed with 2 tsp water

For the Bowl:

  • 8 oz (225 g) noodles (udon, rice noodles, or spaghetti)
  • 1 cup (100 g) shredded carrots
  • 1 cup (100 g) thinly sliced red bell peppers
  • 1/2 cup (50 g) chopped scallions
  • 1/4 cup (25 g) fresh cilantro, chopped (optional)
  • Sesame seeds, for garnish

Instructions

  1. Cook the Noodles:
    • Cook the noodles according to package instructions. Drain, rinse with cold water, and set aside.
  2. Cook the Pork:
    • Heat sesame oil in a large skillet over medium-high heat. Add the ground pork and cook until browned, breaking it into small pieces with a spatula.
    • Add garlic and ginger, and cook for 1-2 minutes until fragrant.
    • Stir in soy sauce, hoisin sauce, chili paste, and red pepper flakes (if using). Cook for another 2-3 minutes to coat the pork in the sauce. Remove from heat and set aside.
  3. Make the Sauce:
    • In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, chili oil, and brown sugar.
    • Heat the mixture in a small saucepan over medium heat until it starts to simmer. Stir in the cornstarch slurry and cook for 1-2 minutes until slightly thickened.
  4. Assemble the Bowl:
    • Divide the cooked noodles into bowls. Top with the cooked pork, shredded carrots, bell peppers, scallions, and any additional vegetables you like.
    • Drizzle the spicy sauce over each bowl and toss to combine.
  5. Garnish and Serve:
    • Garnish with fresh cilantro and sesame seeds. Serve warm and enjoy!
