Ingredients
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 1/4 cup granulated sugar
For the Cheesecake Filling:
- 16 oz (450g) cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
For the Apple Topping:
- 2 medium apples, peeled, cored, and thinly sliced
- 2 tbsp butter
- 1/4 cup brown sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp nutmeg
Instructions
1. Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
- Press the mixture into the bottom of a 9-inch springform pan to form a crust. Bake for 10 minutes, then let it cool.
2. Make the Filling:
- In a large bowl, beat the cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Mix in vanilla extract and cinnamon. Pour the filling over the cooled crust.
3. Bake the Cheesecake:
- Bake for 35–40 minutes, or until the center is slightly jiggly but the edges are set.
- Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight.
4. Prepare the Apple Topping:
- In a skillet, melt butter over medium heat. Add apple slices, brown sugar, cinnamon, and nutmeg.
- Cook for 5–7 minutes, stirring occasionally, until the apples are soft and caramelized.
5. Assemble the Cheesecake:
- Once the cheesecake is chilled, arrange the caramelized apples on top. Drizzle any remaining sauce from the skillet over the apples.
6. Serve and Enjoy:
- Slice and serve chilled or at room temperature.
