Pan-Seared Lemon Herb Cod

Ingredients (Serves 2-3):

  • 2-3 cod fillets (or any white fish like haddock or halibut)
  • 2 tbsp olive oil or avocado oil
  • 1 tbsp unsalted butter (optional, for extra richness)
  • 1 garlic clove, minced
  • 1 lemon (zest and juice)
  • 1 tsp dried oregano or thyme (or use fresh herbs like parsley or dill)
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • Lemon wedges (for serving)

Instructions:

  1. Prep the Fish:

    • Pat the cod fillets dry with paper towels. Season both sides with salt, pepper, paprika, and half of the dried oregano or thyme.
  2. Sear the Fish:

    • Heat olive oil in a large skillet over medium-high heat.
    • Once hot, add the cod fillets (skin-side down if applicable) and cook for 3-4 minutes without moving them to allow a golden crust to form.
    • Flip the fillets carefully and cook for another 2-3 minutes until the fish is opaque and flakes easily with a fork. Remove the fish from the skillet and set aside.
  3. Make the Lemon Herb Sauce:

    • In the same skillet, reduce the heat to medium. Add the butter (if using) and minced garlic, cooking for about 30 seconds until fragrant.
    • Stir in the lemon juice, lemon zest, and the remaining herbs. Cook for 1 minute to let the flavors meld.
  4. Serve:

    • Spoon the lemon herb sauce over the cod fillets. Garnish with fresh herbs and lemon wedges. Serve warm.

Serving Suggestions:

  • Pair with roasted vegetables, mashed cauliflower, or a fresh green salad for a complete gluten-free meal.
