Ingredients
For the chili:
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 medium green bell pepper, diced
- 1 medium red bell pepper, diced
- 500g (1 lb) ground beef
- 2 tbsp tomato paste
- 400g (14 oz) canned diced tomatoes
- 400g (14 oz) canned kidney beans, drained and rinsed
- 400g (14 oz) canned black beans, drained and rinsed
- 1 cup beef stock
Spices:
- 1 tbsp chili powder
- 2 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp cayenne pepper (optional, for heat)
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
Optional toppings:
- Shredded cheese
- Sour cream
- Chopped cilantro
- Sliced jalapeños

Sauté the Vegetables:
Heat olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until softened (about 3 minutes). Add the diced bell peppers and cook for another 5 minutes. -
Cook the Beef:
Push the vegetables to one side of the pot. Add the ground beef, breaking it apart with a wooden spoon, and cook until browned (about 7–8 minutes). Drain any excess grease if necessary. -
Add Tomato Paste & Spices:
Stir in the tomato paste, chili powder, cumin, smoked paprika, cayenne (if using), oregano, salt, and black pepper. Cook for 1–2 minutes to bloom the spices. -
Simmer the Chili:
Pour in the diced tomatoes (with their juices), kidney beans, black beans, and beef stock. Stir well to combine. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 30–40 minutes, stirring occasionally. -
Adjust Seasoning:
Taste and adjust the seasoning with more salt, pepper, or spices as desired. -
Serve:
