Instructions
-
Sauté Vegetables:
Heat olive oil in a medium pot over medium heat. Add the onion, garlic, and bell pepper. Sauté for 3–5 minutes, until softened. -
Cook the Meat:
Add the ground beef or turkey to the pot. Cook, breaking it up with a spoon, until browned (about 5–7 minutes). -
Add Spices & Tomato Paste:
Stir in the tomato paste, chili powder, cumin, smoked paprika, cayenne (if using), salt, and pepper. Cook for 1–2 minutes to let the spices bloom. -
Simmer the Chili:
Pour in the diced tomatoes, kidney beans, and broth. Stir well and bring to a boil. Reduce the heat to low, cover, and simmer for 20–30 minutes, stirring occasionally. -
Taste & Adjust:
Taste the chili and adjust the seasoning if needed. If you prefer a thicker chili, simmer uncovered for an additional 5 minutes. -
Serve:
Ladle into bowls and add your favorite toppings. Pair with crusty bread, cornbread, or a simple side salad.
