8 oz pasta (spaghetti, penne, or your favorite type)
2 tbsp olive oil
2 cloves garlic (minced)
1 can (14 oz) diced tomatoes (or use 2 fresh tomatoes, diced)
1/2 cup heavy cream (or coconut milk for a dairy-free option)
1/4 cup grated Parmesan cheese (plus extra for garnish)
1/2 tsp dried Italian seasoning
1/4 tsp red chili flakes (optional, for heat)
Salt and pepper to taste
1/4 cup fresh basil leaves (chopped, plus extra for garnish)
Instructions
Cook the Pasta
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain and set aside.
Prepare the Sauce
Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
Stir in the diced tomatoes, Italian seasoning, red chili flakes (if using), salt, and pepper. Simmer for 5 minutes, stirring occasionally.
Make It Creamy
Reduce the heat to low and stir in the heavy cream. Simmer for another 2 minutes.
Add the grated Parmesan cheese and mix until melted and smooth.
Combine Pasta and Sauce
Add the cooked pasta to the skillet with the sauce. Toss to coat evenly. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.
Finish with Basil
Stir in the fresh basil leaves and cook for 1 minute.
Serve
Plate the pasta, garnish with extra Parmesan cheese and basil, and serve immediately.
Pair this creamy pasta with a side of garlic bread or a fresh green salad for a perfect lunch. Enjoy! 🍝
