3-ingredient Peanut Butter Cups

Ingredients:

  • 1 cup (170g) chocolate chips (dark, milk, or sugar-free for keto)
  • ½ cup (125g) peanut butter (smooth or crunchy)
  • 2 tbsp coconut oil (or butter, optional for smoothness)

Instructions:

  1. Melt the Chocolate:
    • In a microwave-safe bowl, melt ½ cup of the chocolate chips with 1 tbsp coconut oil in 30-second bursts, stirring in between.
    • Spoon 1 tsp of melted chocolate into each liner of a mini muffin tin (or regular muffin tin for larger cups).
    • Freeze for 5-10 minutes until set.
  2. Add the Peanut Butter Layer:
    • Melt peanut butter with 1 tbsp coconut oil (if using) and stir until smooth.
    • Spoon 1-2 tsp peanut butter onto the hardened chocolate.
    • Freeze for 10 minutes.
  3. Top with More Chocolate:
    • Melt the remaining ½ cup of chocolate and spoon over the peanut butter layer.
    • Freeze again for 15 minutes until firm.
