3-ingredient Peanut Butter Cups
Ingredients:
- 1 cup (170g) chocolate chips (dark, milk, or sugar-free for keto)
- ½ cup (125g) peanut butter (smooth or crunchy)
- 2 tbsp coconut oil (or butter, optional for smoothness)
Instructions:
- Melt the Chocolate:
- In a microwave-safe bowl, melt ½ cup of the chocolate chips with 1 tbsp coconut oil in 30-second bursts, stirring in between.
- Spoon 1 tsp of melted chocolate into each liner of a mini muffin tin (or regular muffin tin for larger cups).
- Freeze for 5-10 minutes until set.
- Add the Peanut Butter Layer:
- Melt peanut butter with 1 tbsp coconut oil (if using) and stir until smooth.
- Spoon 1-2 tsp peanut butter onto the hardened chocolate.
- Freeze for 10 minutes.
- Top with More Chocolate:
- Melt the remaining ½ cup of chocolate and spoon over the peanut butter layer.
- Freeze again for 15 minutes until firm.
